Crystalised Ginger, Cinnamon & Chocolate Granola
2 cups (200g) Flahavan’s rolled oats
2 tbsp tiana’s cooking coconut butter
3 tbsp maple syrup
1/2 tsp cinnamon
1/2 cup (70g) hazelnuts
1/2 cup (90g) dark chocolate chunks
3/4 cup (160g) crystallised ginger
1/4 cup (40g) chopped dates
1/4 cup (35g) chopped walnuts
PREHEAT YOUR OVEN TO 180 C / 356 F
Firstly, add the coconut butter into a pan and place it onto a low heat to melt. Then, add it into a large mixing bowl with the oats, maple syrup, cinnamon and salt. Stir everything together until it is well mixed.
Next, pour the granola mixture evenly onto a baking tray lined with baking parchment. Add the granola into the oven to cook for about 10-12 minutes until golden.
When the granola has cooked, remove it from the oven and set it aside to cool completely. In a separate bowl, add the crystallised ginger, chocolate, hazelnuts, walnuts and dates. When the granola has cooled, pour it into the bowl, and gently stir everything together so that it’s evenly mixed.
Lastly, pour the granola into a jar/airtight container to store it between servings.
