Mango Walnut Energy Bites


What I love the most about walnuts, asides from their delicious taste, are their healthy properties. They are a natural source of many of our bodies needs, containing per ounce; 4.32g protein, 48% of our manganese, 22% of our copper, 11% of our magnesium, 10% of our phosphorus, 8% of our vitamin B6 and 5% of our iron daily intakes (source here).


Mango & Walnut Energy Bites

makes about 18 small bites


Ingredients

150g dried mango

100g dried unsulphured apricots

150g walnuts

2 tsp hemp protein powder

1/2  tsp vanilla extract

1/2 tsp cinnamon

1/2 tsp orange zest

pinch salt


Method

  1. Add the mango, apricots, walnuts, protein powder, vanilla, cinnamon, orange zest and salt into a high powered food processor. Blend all of the ingredients together for a few minutes, until they have broken down and formed a sticky crumb.

  2. When this is done, take a scoop of the mixture and press it into a ball shape, then sit it aside onto a plate. Repeat this process until all of the mixture has been used up.

  3. Then, serve or store in the fridge or airtight container.
